Bahadur Shah Zafar II, the last Mughal Emperor, was a mystic, an accomplished poet and a skilled calligrapher. But while his Mughal ancestors had controlled most of India, the aged Zafar was king in name only. Deprived of real political power by the East India Company, he nevertheless succeeded in creating a court of great brilliance, and presided over one of the great cultural renaissances of Indian history.

Then, in 1857, Zafar gave his blessing to a rebellion among the Company’s own Indian troops, thereby transforming an army mutiny into the largest uprising any empire had to face in the entire course of the nineteenth century. The Siege of Delhi was the Raj’s Stalingrad: one of the most horrific events in the history of Empire, in which thousands on both sides died. And when the British took the city—securing their hold on the subcontinent for the next ninety years—tens of thousands more Indians were executed, including all but two of Zafar’s sixteen sons. By the end of the four-month siege, Delhi was reduced to a battered, empty ruin, and Zafar was sentenced to exile in Burma. There he died, the last Mughal ruler in a line that stretched back to the sixteenth century.

Award-winning historian and travel writer William Dalrymple shapes his powerful retelling of this fateful course of events from groundbreaking material: previously unexamined Urdu and Persian manuscripts that include Indian eyewitness accounts and records of the Delhi courts, police and administration during the siege. Welcome to the Gourmet Indian Series. Today we bring you the dinner delight, Pork Vindaloo.

Got a Headache? Then this dish can the best thing that could happen to you. Recent research shows the ingredients in a curry, particularly a very spicy one like a Vindaloo, can cure a headache faster and more effectively than asprin or paracetemol. More importantly unlike those chemical concotions a curry doesn't have unwanted side effects. The active tumeric ingredient in a vindaloo is also present in current medical treatments we use every day for treeating cold and flu symptoms.

Ingredients: 1.5 kgs of pork, 1/2 cup curry leaves, Grind: 20 red chilies, 10 peppercorns, 1 tsp. cumin seeds, 1 tsp. coriander seeds, 4 green cardamom pods, 2 small sticks cinnamon, 2 tsp. turmeric powder Slice: 7 medium onions (red onions), 1 head of garlic, 1 inch ginger, 6 green chilies, 30 centiliter of malt vinegar, 25 centiliter of oil, salt to taste

Method: 1. Grind the masala with vinegar. 2. Cut the pork into cubes and wash with weak
vinegar. 3. Rub the meat with the ground masala and keep overnight. 4. Heat the oil, add the curry leaves. 5. When they turn gold, add the meat with all the other ingredients. 6. Mix well, add the salt. Cover and simmer for about 2 hours until the meat is tender. 7. Cool and then transfer into clean jars.
Vindaloo is great with sandwiches, with dal and rice, hot parathas. Do not add any water. If there
is some cooking juice, make sure it is all evaporated. The sauce should be almost nonexistent, just coating the pork with bits of onions etc.

Slot receiver Brandon Stokley (41 receptions, 1 TD) and tight end Dallas Clark (37 receptions, 4 TD) are two other returning weapons which Manning will surely utilize in '06, though Stokley (ankle) is questionable for Week 1.

The Giants were just 27th in the NFL in passing yards allowed (224.0 ypg) in 2005, and were too often burned by the big play, which is why Coughlin and general manager Ernie Accorsi made re-tooling the secondary a top priority. New York brought in a pair of veteran corners in Sam Madison (55 tackles, 2 INT with Miami) and R.W. McQuarters (60 tackles, 1 INT with Detroit) plus safety Will Demps (52 tackles with Baltimore) as reinforcements. Demps steps right in at free safety and Madison will start opposite Corey Webster (37 tackles), who showed a lot of raw ability as a rookie last season. The group will benefit greatly from arguably the NFL's top pass-rush combo in ends Michael Strahan (81 tackles, 11.5 sacks) and Osi Umenyiora (70 tackles, 14.5 sacks). Indianapolis did allow a league-low 20 sacks last season, partly because of Manning's quick release and decision-making, and all five starters are back. Left guard Ryan Lilja may not play Sunday, however, because of an injured knee.


The obvious question regarding the Colts' offense is whether the team can replace the production of James (1506 rushing yards, 44 receptions, 14 TD), who had four 1,500-yard seasons in seven years and is one of the best receiving backs in football. Remember, though, that Dominic Rhodes (118 rushing yards, 4 TD) ran for over 1,100 yards in 2001 when James missed most of that season with a knee injury. Indianapolis also drafted LSU's Joseph Addai, a bigger and faster back than Rhodes, in the first round of April's draft. The rookie will be brought along slowly while he learns the Colts' complex system.


New York was near the middle of the pack in run defense (103.5 ypg) in 2005 but struggled in that area late in the season when sturdy middle linebacker Antonio Pierce (99 tackles, 2.5 sacks, 2 INT) was out with an ankle sprain. He anchors a potentially stellar linebacking corps, provided everyone can remain healthy. The Giants signed three-time Pro Bowl selection LaVar Arrington (47 tackles with Washington) to a lucrative offseason deal after he wore out his welcome with the Redskins. Weakside starter Carlos Emmons (48 tackles, 1 INT) played well when able, but he missed seven games last year with various injuries. Strong safety Gibril Wilson (112 tackles, 3 sacks, 2 INT) was the team's leading tackler in 2005 and has developed into a quality run-stopper. New York does have some uncertainty at defensive tackle, where rookie Barry Cofield is expected to start alongside Fred Robbins (26 tackles, 1.5 sacks).


GIANTS OFFENSE VS. COLTS DEFENSE


Eli Manning (3762 passing yards, 24 TD, 17 INT) actually threw for more yards than big brother Peyton last year, and made a good deal of progress in his first season as a full-time starter. However, he still struggled at times with turnovers and his playoff debut (118 yards, 3 INT) was an utter disaster. Still, the 25-year-old directed an offense that ranked third in the league in scoring (26.4) and fourth in total yards (361.7 ypg) and should have his best season yet in 2006. Eli's got plenty of resources around him in the passing game. Plaxico Burress (76 receptions, 1214 yards, 7 TD) was a dominant playmaker at times, although Coughlin would like to see more consistency out of the ultra-talented wideout, and tight end Jeremy Shockey (65 receptions, 7 TD) can be a nightmare matchup for opposing safeties. Thirty-two-year-old Amani Toomer (60 receptions, 7 TD) is coming off a solid season as the No. 2 wide receiver, but depth is a concern. The Giants drafted speedy Sinorice Moss in the second round back in April, but the Miami product's progress has been slowed by a preseason quadriceps injury.


After surrendering more than 243 yards per game through the air in 2004, Indianapolis made great strides in defending the pass last season. The Colts cut that number down to 196.9 yards per game in 2005, mainly because of the team's ability to pressure the quarterback. Dwight Freeney (34 tackles, 11 sacks) is as good a rush end as there is in the league, as evidenced by his 51 sacks in his first four NFL seasons. Robert Mathis (54 tackles, 11.5 sacks) was also a disruptive force on the other side, leading the league with eight forced fumbles along with his double-digit sack total. The tandem could present major problems for a pedestrian Giants' offensive line which allowed 53 sacks last year, the third-highest number in the league.


While the Manning brothers are receiving all the hype, the key to this game may lie in the ability of Tiki Barber and the Giants to run the ball. New York ranked sixth overall in rushing yards (138.1 ypg) in 2005, thanks to an unbelievable season from Barber, whose career-high 1,860 on the ground trailed only MVP Shaun Alexander for most in the league. He added 530 receiving yards on 54 catches and scored 11 total touchdowns. It's hard to believe Barber can match those lofty numbers at the age of 31, but his durability and marvelous physical condition suggest he'll remain a top-echelon back this year.


Barber will go up against an Indianapolis run defense that was adequate but nothing special last season. The Colts gave up an average of 110.1 yards per game on the ground, 16th-best in the league, but teams often abandoned the run game against them because they were behind on the scoreboard. Tackle Corey Simon (34 tackles) won't likely play while he recovers from a preseason procedure on his knee, so Monte Reagor (36 tackles, 5.5 sacks) and converted end Raheem Brock (44 tackles, 6.5 sacks - both smaller and quicker interior linemen - have to make sure not to be pushed around. Middle linebacker Gary Brackett (127 tackles, 3 INT, 1 sack), Indy's leading tackler last year, has also been hampered by an injured knee but is expected to go. He and playmaking weakside man Cato June (102 tackles, 5 INT) are a formidable tandem, while Bob Sanders (91 tackles, 1 INT) may be the league's best run-stopping safety not named Troy Polamalu.


OVERALL ANALYSIS


Manning Bowl I could very well live up to its pregame hoopla, as both teams possess high-powered offenses capable of putting up plenty of points. Barber should have another big night, which will keep Peyton and Co. on the sidelines. But the odds are Eli will be more likely to commit a crucial mistake than big brother, especially if the Giants' offensive line can't contain Indy's strong pass rush. New York's secondary is still suspect until proven otherwise and will provide Peyton with enough opportunities to allow the Colts to pull out a hard-fought road win.

The Punjab is situated in eastern India and is divided by the Indian/Pakistani border. It is very fertile because of the rivers that cross here and as a consequence, agriculture is central to the economy. Wheat accounts for a large proportion of the crops, along with corn, mustard greens, sugar cane and rice.


Buffalo milk which is 3% higher in fat than cows milk, is also important to the Punjabis, who are not prey to worries about cholesterol. Every bit of the buffalo milk is used in some way or other. Some is used in tea or evaporated into a much thicker richer milk known as bhadoli, which in turn is set into yoghurt. The thick cream will be removed from the top of the yoghurt and churned into butter. Some of the butter will be saved as is and the rest will be warmed slowly and turned into ghee (clarified butter) by pouring off the clear butter and discarding the solid sediment. Yet more of the milk will be made into paneer, the Indian equivalent of cottage cheese. The milk is boiled then curdled by adding lime juice then strained of whey, leaving the curds which can be shaped into solid rounds.


The Punjab is predominantly Sikh, being the home of the Golden Temple at Amritsar, central to the Sikh religion, thus more than half of all Punjabis are vegetarian. No one goes hungry here and Sikh temples always offer simple free meals of bread and vegetable curry to all who turn up.


Bread is the most important part of the Punjabi diet. Rotis are made from wholewheat flour and water, formed into balls and flattened into discs which are then slapped onto the site of a tandoor or onto a tava (a flat griddle pan like a flat frying pan). Rotis are commonly eaten for breakfast with butter, fresh yoghurt and pickles, while for lunch or dinner there will be parathas which are much richer, being brushed with ghee, folded and rolled again before being cooked and brushed with more ghee.


Unlike most of the rest of India, rice in the Punjab is for special occasions only or for making rice pudding.


Lunch in the fields will often consist of paratha and a curry made from onions fried with garlic, ginger, green chillies, cayenne, garam masala, tomatoes, turmeric and salt. Potatoes are stirred in and coated with the spices before adding water and cooking slowly.


Breads may also be served for dinner with small black beans and kidney beans cooked with onions, ginger, garlic and tomatoes and garnished with butter. Another favourite is paneer bhaji - tomatoes, chillies and ginger quickly fried with crumbled paneer added - or the same basic mixture with pure?d spinach and cubes of paneer added. Paneer can also be dipped in chick pea flour batter and deep fried, making pakora. Mustard greens may be cooked very slowly with green chillies then when soft, pure?d, thickened with cornmeal flour and added to fried onion, tomato and ginger and garnished with white butter.


For the non-vegetarians, there is tandoori chicken - whole chicken marinaded in yoghurt and spices, cut into pieces and cooked in a tandoor - or tikkas (kebabs) of chicken or cubed or minced meat mixed with spices, garlic and ginger.


Cheap fast food restaurants called dhabas are common in the Punjab and often have their own specialities - one may concentrate on paneer bhaji and another, tandoori chicken - but you can be sure that wherever you eat in the Punjab, you will be filled with nourishing, tasty food.

August 15th, 2005 will signify 58 years of freedom for India. Jawaharlal Nehru, India's first prime minister, gave a speech to the Constituent Assembly at midnight on August 14, 1947. "At the dawn of history India started on her unending quest.she has never lost sight of that quest or forgotten the ideals which gave her strength. We end today, a period of ill fortune and India discovers herself again." His speech inspired us with ideals about a new beginning for India.



Has India lived up to these ideals? Although the British no longer occupy India, is she really independent of their influence? While they were in India, we began to follow their traditions, their philosophies, and their lifestyle. We silently allowed them desecrate our heritage, culture and religion. Yet now, it is we, the Indians that continue to honor those who tried to destroy our culture.

Perhaps the biggest tragedy has been in the area of religion. We have continued to carry the torch for the British missionaries in their attempts to dissuade our belief system. We continue to allow the desecration of the essence of Bhartiya culture and tradition -- the scriptures. Not only do we believe in wrong information, we allow for the propagation of it through textbooks in prestigious Indian schools and universities. Fictitious theories about the Aryan invasion, the history of Indian civilization, the origin of our scared Sanskrit language are being taught to our youth even today.

Let's take one example of a great Indian philosopher, Sarvepalli Radhakrishnan, President of India from 1962 to 1967. Widely renowned for his philosophical writings and lectures, he was highly influenced by the books of the European writers who wrote about Hinduism and the history of India. His own writings perpetuated the British belief system rather than the knowledge of Bhartiya scriptures.

For example he wrote in his book Indian Philosophy Vol.1, "Rama is only a good and great man, a high-souled hero, who utilized the services of the aboriginal tribes in civilizing the south, and not an avatar of Vishnu. The religion it reflects is frankly polytheistic and external."

Further, Radhakrishnan remarked that "brahamanization of Krsna religion and elevating Vishnu as the great God took place around 300BC." In his writings he has called the early Hindus 'the beast', the Divine wisdom of the Rishis 'the God-making factory,' and defined the Vedic religion as 'the religion of the primitive man in the world of ghosts and goblins who were only satisfied with bloody sacrifices.' He described the teachings of the Upnishads and the Puranas as 'speculation, myth, parables and heretical doctrines,' called Mahabharat 'a non-Aryan epic poem' and tells that 'the higher mysticism of Yog Darshan was mixed with drug intoxication.'

In fact, Hinduism, originally called Sanatan Dharm, is a universal religion intended for the whole world, not for any specific race. The Vedic culture is the heritage of world civilizations and we should be proud that it originated in India, not shy away from it. The spiritual wisdom of ancient India is a gift to mankind and we as Indians need to cherish, nurture and be proud of it.

Many of us want to be "like the West". We wear Western clothes, watch cable TV, send our children to convent schools and allow them to be taught by the very books that were authored by the British. The impressions of our freedom struggle are from a history book in English rather than our national language. Trousers and shirts replace traditional dress. Urban youth are shying away from Indian culture and gravitating towards Western assimilation. Modernization has been equated with Westernization.

Somewhere along the way 150 years of the 'Raj' has definitely left its mark.
We have somehow lost our way towards the pursuit of independence, and have continued to be ruled by an invisible 'Raj'. We have lost sight of our quest. We have forgotten the ideals which gave us strength. There is still time to change the future, to return to our roots. We can re-discover India's timeless teachings, we can change the generations to come. Perhaps the question is not whether we have the ability to do it, but rather will we take on the challenge?
